Chicken Pot Pie

Chicken pot pie is really a combination of two favourite recipes.  Chicken stew, made with leftover roast chicken and stock along with onions and frozen vegetables, topped with buttermilk biscuit dough and then baked into a delicious pot pie.  It's essentially a cobbler with meat instead of fruit.

Coffee break

A quick coffee break featuring a cappuccino and white coffee. White coffee was new to us and consists of a double shot of espresso, hot water and steamed milk. Every barista had a slightly different variation, but the coffee, water and milk seemed to be in equal parts.

Helmi roasted another chicken, but this time I put it over a bed of potatoes and red peppers.  The result?  Some of the tastiest veggies I've ever made.  That glistening shine?  Pure chicken fat.

Twice-baked Potato

Twice-baked potatoes, inspired by the Keg.  A regular baked potato with it's insides carved out and remixed with spices, cheese and bacon.  Served with roast chicken.

This is the lunch special from Fitz Patrick's in Doolin Co. Clare. Main course consisted of turkey, potatoes (boiled and mashed), cauliflower mash, crispy kale and gravy. First desert is a chocolate pecan tart and the second is a carrot cake with cream.

Heirloom tomatoes from our Manorun Farm farmshare, fresh mozzarella, maldon salt, pepper, a splash of white balsamic vinegar (I hate the way regular balsamic makes the cheese go pinkybrown) and the most delicious, amazing, fruity Californian olive oil from The Olive Pit on Queen West, all sopped up with some olive foccacia.

Guinness + Crisps + Club = Irish Lunch

My first meal on a recent trip to Ireland (specifically the Spanish Arch in Co. Galway). Guinness was great, but the crisps were amazing. The sandwiches are ham & cheese and the chicken club (avec BACON!).

Birthday Cake

It's our friend Sarah's birthday, and I've gone all out for a fantastically-decorated buttermilk/vanilla sheetcake, layered with homemade butterscotch pudding, and covered in buttercream icing.  The secret? Coloured icing made beforehand and stored in the freezer for future use (courtesy of my mom).  Thanks mom!
