Ratatouille

Ratatouille, inspired by Smitten Kitchen inspired by the film Ratatouille.  I'm not sure if it's authentic (i.e. sopping) as a true zucchini, eggplant, and tomato stew, but it was delicious and surprisingly easy to make.
